SATAY NOODLE STIR-FRY

Ingredients
  • 2 garlic cloves, crushed

  • ¼ cup crunchy peanut butter

  • 1 tablespoon brown sugar

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 2 tablespoons kecap manis (sweet soy)

  • 2 tablespoons Trident Sweet Chilli Sauce

  • 500g chicken breast, sliced into strips

  • Peanut oil

  • 400g Trident Udon Noodles

  • 1 red onion

  • 1 carrot sliced

  • 1 head of broccoli, cut into florets

  • ¼ cabbage, finely sliced

  • 1 can Trident Baby Corn Spears, sliced

  • 2 sticks of celery, diced (you can substitute any of your favourite vegies or whatever you have in the fridge!)

  • Cashew nuts, to garnish (optional)

Instructions:
  • In a small bowl mix together crushed garlic, peanut butter, brown sugar, soy sauce, sesame oil, kecap manis and Trident Sweet Chilli Sauce. Put aside.

  • Fry chicken in some peanut oil until browned and remove from wok.

  • Prepare noodles as per packet instructions.

  • Add a little more peanut oil to the wok and stir-fry all the vegetables for a few minutes.

  • Add the sauce mixture and chicken and cook for a further few minutes before adding the prepared noodles and a little of the noodle water (about ¼ cup). Stir until all ingredients are combined and noodles are well coated with the sauce. Serve with a few cashews on top!
