Trident Asian Chicken Rolls

Serves

Can be served as entree or main. Makes 20 plus rolls.


Ingredients
Base Recipe
  • 2 cloves of garlic

  • 2 tablespoons of coriander root

  • ½ teaspoon sea salt

  • ½ teaspoon peppercorns

  • 1 tablespoon Trident Stir-Fry Fish Sauce

  • 2 tablespoons Trident Stir-Fry Hoisin Sauce

  • 1 large chicken breast, cut into thin slices

  • 5 -10 Thai shallots, depending on size finely sliced

  • 2 tablespoons vegetable oil

  • 2 tablespoons lemongrass, finely chopped

  • Splash of fresh lime juice

  • 2 spring onions - green part only, finely chopped

  • Handful of coarsely chopped coriander

  • ½ cup of mint leaves

  • Trident Rice Paper Rolls

  • Trident Sweet Chilli with Lime Dipping Sauce

Fillings
  • Red capsicum, finely cut into strips (membrane removed)

  • Cucumber, finely sliced

  • Frilly lettuce

  • Bean sprouts

  • Vietnamese mint

  • Thai basil

  • Red chilli

  • Carrot, finely shredded

  • Snow peas, cut into strips

  • Crushed peanuts (Macadamias or cashews may be used)

Garnish
  • Mint

  • Chilli

  • Sprinkle of red chilli powder

Instructions:
  • Use a mortar and pestle to pulverize garlic, coriander root, salt and pepper to make a paste.

  • Add Trident Stir-Fry Fish Sauce and Trident Stir-Fry Hoisin Sauce to the paste and use this to marinate chicken.

  • In a little oil, fry Thai shallot until lightly browned.

  • Heat some more oil and cook chicken in batches at high heat. Remove to a bowl, add lemongrass and Thai shallots and allow to cool to room temperature.

  • Add a splash of lime juice, spring onion, coriander and mint.

  • Moisten Trident Rice Paper Rolls one at a time for 10 seconds in a bowl of warm water.

  • Lay down on a damp cloth on a hard flat surface and add a portion of the base filling and any other fillings to one end and roll tightly. The old saying applies, less is more.

  • Add garnish. Serve with your favorite Trident Dipping Sauce. Trident Sweet Chilli with Lime Dipping Sauce is highly recommended.

Tips
  • This recipe can be made in advance. The preparation for this recipe takes a little time, but once complete, the host can relax.

  • Alternatively, prepare the base recipe and allow guests to experiment from a selection of fillings.

  • Great addition to a picnic or the school lunchbox but ensure the rolls are covered with a damp tea towel or plastic wrap to retain moisture.
