Vegetarian Pad Thai

Ingredients
  • 350g firm tofu

  • Splash soy sauce

  • Splash Trident Thai Chilli & Lime Marinade

  • 1 tablespoon brown sugar

  • Juice of 1 lime

  • 1½ tablespoons tamarind paste

  • 2 tablespoons peanut butter

  • 1 tablespoon tarmari or soy sauce

  • 300g packet Trident Pad Thai Noodles

  • 1 tablespoon sesame oil

  • 1 pack of fresh bean shoots

  • ½ green or yellow capsicum, sliced

  • ½ red capsicum, sliced

  • ½ carrot, chopped

  • 1 bunch of spring onions, finely sliced

Instructions:
  • Slice tofu and marinade with a little soy sauce and Trident Thai Chilli & Lime Marinade.

  • To make sauce, add sugar, lime juice, tamarind paste, peanut butter and tarmari or soy sauce to a saucepan on low heat. Stir until smooth, adding a little hot water to achieve desired consistency.

  • Prepare noodles as directed on pack.

  • Heat wok, add sesame oil and fry tofu for a few minutes. Add vegetables, cook for 3 minutes before adding noodles and stirring through sauce.
