East Meets West Sweet Chilli Lamb Cutlets with Coconut Pumpkin Mash

Serves

2 (double the ingredients to serve even more loved ones!)


Ingredients
  • Half a pumpkin, cubed

  • 400ml can Trident Lite Coconut Cream

  • 4 tablespoons coriander, chopped

  • Salt & pepper, to taste

  • 410g can Trident Baby Corn Spears

  • 4 tablespoons of Trident Sweet Chilli Sauce

  • 2 tablespoons vegetable oil

  • 6 lamb cutlets

Instructions:
  • Boil water and add pumpkin. When soft, drain water and add half a can Trident Lite Coconut Cream and 2 tablespoons of chopped coriander. Season with salt and pepper to taste, mash and set aside.

  • Heat wok, add Trident Baby Corn Spears, and toss to warm with the remaining 2 tablespoons of coriander. Set aside.

  • Coat lamb cutlets with Trident Sweet Chilli Sauce. Heat wok and add oil. Add lamb to wok, and cook to your liking.

Tips:
  • To serve you could add Asian greens and radish.
