Cracked Crab in Plum Sauce and Garlic

Ingredients
  • 1 large, live mud crab

  • 2 tablespoons oil

  • 5 or 6 cloves chopped garlic

  • 2 chillies, thinly sliced (more or less, dependent on taste)

  • ¾ cup plum sauce (recipe below)

  • 2 spring onions, sliced in 2cm pieces

Plum Sauce
  • 375g plum jam

  • 2 tablespoons vinegar

  • 1 tablespoon soft dark brown sugar

  • 1 tablespoon finely chopped onion

  • 1 clove garlic, crushed

  • ½ teaspoon ground ginger

  • 2 tablespoons Trident Sweet Chilli Hot Sauce (or Trident Sweet Chilli Sauce for the faint of heart)

Instructions:
  • To make the sauce, heat all ingredients thoroughly in saucepan over medium heat until sugar is melted and ingredients are blended. Put aside.

  • Place the mud crab in the freezer for an hour.

  • Remove the crab from the freezer and clean. Remove gills and other inedible parts. Chop legs, claws and body into pieces.

  • Heat oil in wok and stir-fry crab, garlic and chillies until crab turns orange
    (3-4 minutes).

  • Toss with plum sauce until coated.

  • You may add more plum sauce if needed. Just before serving, toss in shallots and then serve on a large platter.
