Ingredients

1 large, live mud crab

2 tablespoons oil

5 or 6 cloves chopped garlic

2 chillies, thinly sliced (more or less, dependent on taste)

¾ cup plum sauce (recipe below)

2 spring onions, sliced in 2cm pieces
Plum Sauce
375g plum jam
2 tablespoons vinegar
1 tablespoon soft dark brown sugar
1 tablespoon finely chopped onion
1 clove garlic, crushed
½ teaspoon ground ginger
2 tablespoons Trident Sweet Chilli Hot Sauce (or Trident Sweet Chilli Sauce for the faint of heart)
Instructions:
To make the sauce, heat all ingredients thoroughly in saucepan over medium heat until sugar is melted and ingredients are blended. Put aside.
Place the mud crab in the freezer for an hour.
Remove the crab from the freezer and clean. Remove gills and other inedible parts. Chop legs, claws and body into pieces.
Heat oil in wok and stir-fry crab, garlic and chillies until crab turns orange
(3-4 minutes).Toss with plum sauce until coated.
You may add more plum sauce if needed. Just before serving, toss in shallots and then serve on a large platter.
