Piquant Cabbage in coconut milk with baby corn

Serves

4-6


Ingredients
  • 1 tablespoon oil

  • 4 shallots, finely sliced

  • 1 teaspoon chopped garlic

  • 1 large chilli, chopped

  • 2 x 400ml cans Trident Coconut Milk

  • ½ 410g can Trident Baby Corn Spears, drained

  • 4 cups chopped cabbage

  • 2 tablespoons dried prawns, soaked in warm water to soften

  • Salt, to taste

  • Rice or noodles, to serve

Instructions:
  • Heat oil in saucepan. Stir-fry shallots, garlic and chilli until softened.

  • Add Trident Coconut Milk and Trident Baby Corn Spears and heat until almost boiling.

  • Add cabbage, prawns and salt and simmer until cabbage softens - about 15 minutes.

  • Serve hot over rice or noodles.
