Ingredients

2 chillies, chopped

4 cloves garlic, chopped

3 spring onions, chopped

2cm of galangal, chopped
-
2cm ginger, chopped
-
Peanut oil for frying

750g of sirloin steak, sliced

¾ cup Trident Lite Coconut Cream or Milk

3 tablespoons meat curry powder
-
½ cup of water
-
1 cup of desiccated coconut
To Serve
Steamed basmati rice
Crushed nuts
Coriander
Pappadums
Instructions:
In a blender or mortar and pestle blend chillies, garlic, onion, galangal and ginger. Add to heavy based pan along with oil and fry lightly. Add meat and fry for 3 minutes.
When slightly brown add ¾ cup coconut milk, curry powder and water and simmer.
Lightly toast coconut in a dry frypan then add to mortar and pestle and grind finely. The coconut thickens the sauce but if it is not grinded finely it will thicken but not completely dissolve. Add to the rest of mixture.
Cook for 1-1½ hrs or until tender.
Serve with rice, crushed nuts, coriander and pappadums.
