coconut and lime prawns

Ingredients
  • ½ cup breadcrumbs

  • 1 cup shredded coconut

  • 1 lime, for zest

  • 400ml can Trident Coconut Milk

  • 1 cup of oil

  • 10 peeled green prawns

  • Trident Sweet Chilli Dipping Sauce, to serve

Instructions:
  • Mix breadcrumbs, coconut and lime zest in a bowl. Place coconut milk in a separate bowl. Heat oil on medium to hot.

  • Pat prawns dry, dip in coconut milk then coat with the breadcrumbs mix and put in the oil.

  • When the prawns are browning, flip. When golden brown on both sides place on a dish with paper towel, to drain.

  • Serve with Trident Sweet Chilli Dipping Sauce.
