Banana Fritters with coconut syrup

Ingredients
    Coconut Syrup
  • 1 cup sugar

  • ½ cup Trident Light Coconut Milk

  • Banana Fritter
  • 1 cup self-raising flour

  • ¼ teaspoon bicarbonate of soda

  • 1 cup of water

  • 4 bananas

  • Oil, for deep frying

  • Vanilla ice-cream, to serve

Instructions:
  • To make syrup, add sugar and Trident Light Coconut Milk to a heated wok. Stir until sugar is dissolved and then simmer for 5 minutes. Remove from heat and allow to cool. Pour into a jug. Syrup is best made in advance to allow time to cool and thicken (can be made the day before required and stored in fridge). Wash out wok before making fritters.

  • For fritters, sift flour and bicarbonate of soda into bowl, add water and mix to a smooth batter. Peel bananas, cut into three. Heat oil. Drop banana pieces into batter, drain off excess. Deep-fry in hot oil until golden brown. Remove and drain on absorbent paper.

  • Serve with coconut syrup and ice-cream.
