Chicken Stir-Fry in Black Bean Sauce

Ingredients
  • 300g chicken thighs or breast fillets, cut into bite-size pieces

  • 2 teaspoons light soy sauce

  • 1 teaspoon cornflour

  • 1 tablespoon cooking oil

  • 1 teaspoon grated ginger

  • ½ cup carrots, sliced thinly

  • 1 small can water chestnuts

  • ¼ teaspoon each of salt and sugar

  • 3 tablespoons Trident Stir-Fry Black Bean Sauce

  • 3 tablespoons of hot water

  • ½ cup spring onion base, cut diagonally

  • ½ cup red capsicum, sliced

  • 1 cup bok choy, cut roughly

  • Rice, to serve

Instructions:
  • Marinate the chicken pieces with the soy sauce and cornflour and set aside for at least 10 minutes. In a wok heat the cooking oil on a medium to high heat. When the oil is hot add the ginger and stir-fry for a minute until fragrant. Add the marinated chicken pieces and stir-fry until nearly cooked.

  • Add the carrots and water chestnuts with salt and sugar and stir-fry to caramelise the chicken (for about a minute or two). Now add the Trident Stir-Fry Black Bean Sauce and the hot water. Stir-fry for roughly another minute or two and then add the remaining vegetables. Stir-fry the vegetables to your desired taste but no more than 3 minutes if chicken breast fillets are used.

  • Serve over a bed of rice.

Tips
  • Vegetables of your choice may be used.

  • This recipe was cooked with chicken thigh fillets but you may use chicken breast instead, however the breast meat does not require a long cooking time so reduce the cooking time accordingly. Beef would be another great alternative to chicken.

  • Trident Stir-Fry Black Bean Sauce is really yummy. Perhaps you may wish to marinate the chicken pieces with a tablespoon of the sauce followed by the corn flour. A teaspoon of freshly preserved black beans may be added during the frying stages of the ginger, this will add further authenticity but you may need to adjust the taste of the sauce because the bean can be salty, so use as much as or as little as you prefer.

  • You may add fresh cut chillies with ginger if you would prefer hot and spicy.
