Ingredients
- For The Chicken
- 1 tablespoon extra virgin olive oil
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 500g boneless, skinless chicken thighs, cut into 1-inch pieces
- Chives, optional
Bang Bang Sauce
- 1/3 cup Trident sweet chilli sauce
- 2 teaspoons Trident Sriracha, or more to taste
- 1 cup S&W mayonnaise
- 2 tablespoons honey
- 2 teaspoons Rice vinegar
Instructions
Step 1 - In a large bowl, whisk together the oil, Cajun seasoning, smoked paprika, garlic powder, salt and pepper.
Step 2 - Add the chicken and mix everything so the chicken is well coated with the spices and oil.
Step 3 - For the Bang Bang Sauce. Mix the mayonnaise, Trident Sweet chilli sauce, Trident Sriracha, honey, and rice vinegar in a small bowl. This gives you around 1 1/2 cups of bang bang sauce.
Step 4 - Reserve half of the sauce for later. Add the remaining sauce to the bowl with the chicken. Mix well and refrigerate for 30 min.
Step 5 - For each skewer, slide on 5-6 pieces of chicken. Cook the skewers on a hot bbq or grill for about 11-12 minutes, turning them over halfway. Transfer the skewers to a serving dish and brush with the remaining bang bang sauce. Garnish with the chives. Enjoy!
