CHICKEN MARINADE
Ingredients
- 2 x chicken breasts, sliced thinly
- 3 tbsp Trident Sriracha Green Chilli Sauce
- Zest of 1 lime and it’s juice
- 1 x garlic clove, minced
- 1 tbsp vegetable oil
- Pinch of salt
- Pinch of black pepper
SALAD
- 200g soba noodles, cooked and rinsed under cold water
- A handful of bean sprouts
- 1 x carrot, julienned
- 2 x spring onion, sliced
- A bunch of coriander, chopped
- A handful of roasted peanuts, chopped
DRESSING
- 3 tbsp Trident Sriracha Green Chilli Sauce
- 3 tbsp rice wine vinegar
- 2 tbsp light soy sauce
- 2 tbsp vegetable oil
- 1 tbsp toasted sesame oil
- 1 garlic clove, minced
- 1 tbsp minced ginger
- 2 tbsp finely chopped coriander
- 2 tbsp finely chopped spring onion
- 1 tbsp toasted white sesame seeds
Instructions
Step 1 - Place chicken breast and all the marinade ingredients into a mixing bowl. Toss until well coated and set aside at room temperature for 30 minutes or refrigerated overnight to marinade.
Step 2 - To make the salad add all the ingredients into a large mixing bowl. Place all the dressing ingredients into a separate mixing bowl and mix until well combined. Toss the dressing through the salad leaving a little aside to drizzle over before serving.
Step 3 - Cook the chicken breasts on a lightly oiled hot pan at high heat for 4 – 5 minutes on both sides or until cooked through. Let rest for 5 minutes before slicing. Transfer soba noodle salad to a serving dish, top with chicken and drizzle with remaining salad dressing.
