Ingredients
- 2 tbsp olive oil
- Pack of soft flour tortillas
- 500g chicken breast, diced
- Β½ cup Trident extra hot sriracha hot sauce
- 1 tsp of garlic powder
- 2 carrots, julienned
- ΒΌ pineapple, julienned
- Β½ red onion, thinly sliced
- Β½ cup of coriander
- 1 lime, juiced
- Β½ cup of greek yogurt
- 1 tsp of dried mint
- 1 tsp of dried coriander, chopped
Instructions
Step 1 - Mix dressing ingredients, refrigerate.
Step 2 - Season chicken with hot sauce, garlic powder and 1 tbsp olive oil. Add chicken to medium heat pan, cook for 6-8 mins.
Step 3 - Toast tortillas on medium heat in a pan with 1 tbsp olive oil, until golden.
Step 4 - Combine salad ingredients together in a bowl. Serve chicken and salad on tortillas, top with yogurt dressing.
